Chicken & Orzo Chowder

I can't believe that it snowed last night! Snow in spring is a frequent event for my home in Pennsylvania but I can't say it happens too often out here in the Midwest. This evening is perfect for snuggling up with my husband on the couch with a big, bowl of soup and our current favorite show...Dr. Quinn the Medicine Woman!
This soup has been on our family menu many times! It is perfect for any time of the year whether it's a chilly, spring day or a snowy, winter one! You will really enjoy this soup! This is also a great option to take to a friend or family member who is under the weather or needing a little pick-me-up! I like to pick up a pretty food storage container to give to them to keep once the soup is gone. Then pair it with a loaf of homemade bread or a dozen homemade biscuits!
Ingredients ~
1/2 cup finely chopped yellow onion
1/2 cup diced celery
1/2 cup diced carrots
5 tablespoons unsalted butter
1/4 cup flour
1 box of chicken stock
2 cups water
3/4 cup dry orzo pasta
1 teaspoon Better Than Bouillon -chicken
1 teaspoon sea salt
1/4 teaspoon black pepper
dry dill - to taste
2 cups roasted chicken
3/4 cup heavy cream or half & half
Melt butter in a stock pop and add in the onions, celery and carrots. Cook until tender. Sprinkle with flour and stir for 1 min. Add chicken stock, water, orzo, bouillon, salt and pepper. Simmer until pasta is tender. Add in cream and chicken and continue to simmer. Season to your taste with dill. Don't forget the dill! It makes this soup really great! Enjoy with a warm piece of French baguette or homemade biscuits!
