Watermelon Mint-Lime Salad


Get ready for one of the most refreshing fruit salads of the summer! The sweet melon and ripe raspberries are the perfect companions to the fresh mint and the citrusy burst of lime! This watermelon salad is a marriage of my husband's love of watermelon and my love of anything mint! We have been growing fresh mint alongside our berry garden for the past few years and I am always eager to use it in recipes. Here is what you need to stir up a big bowl for yourself!

Ingredients ~

4 cups of watermelon - I use a melon baller to cut up the watermelon...it looks so pretty!
1/2 pint of raspberries
12 fresh mint leaves
6 TBSP freshly squeezed lime juice (Ditch the lime in a bottle stuff!)

Combine the melon and raspberries in a large bowl. Finely mince the fresh mint and add to the fruit. Pour the squeezed lime juice over the fruit salad and stir gently with a rubber spatula to combine.
Chill in the fridge for 2-4 hours.
